Beyond Pumpkin: Fresh Fall Flavors

It seems like the moment August rolls around, the countdown begins for pumpkin season. Every year, pumpkin-flavored products seem to hit menus and shelves a little earlier, and by the time fall officially arrives, we’ve seen pumpkin just about everywhere. While guests still look forward to those familiar seasonal favorites, fall has so much more to offer. Brown butter, maple, pear, fig, black garlic, smoked cinnamon, and fresh herbs like sage and thyme can all bring the warmth and comfort of the season to a menu without feeling predictable or overdone.

The key is thinking beyond individual ingredients and focusing on how flavors work together. Brown butter and sage can add richness to pasta, roasted vegetables, or even seafood, while maple can bring a sweet-savory balance to bacon, brussels sprouts, pork, and bourbon. Pear and fig offer natural sweetness that pairs beautifully with cheeses, cured meats, and greens, making them easy additions to salads, flatbreads, sandwiches, and appetizers. Black garlic brings mellow sweetness and umami to steaks, mushrooms, burgers, and sauces, while warm spices like smoked cinnamon, cardamom, and allspice can add seasonal character to everything from desserts and coffee to barbecue and savory dishes.

These flavors also create opportunities to refresh familiar menu items without completely reinventing your kitchen. A classic burger can become a seasonal LTO with apple butter, sharp cheddar, and bacon. A simple flatbread can take on a fall twist with fig, prosciutto, and goat cheese. Even a cocktail, vinaigrette, sauce, or side dish can feel seasonal with the right combination of ingredients. Building layers of complementary flavors allows you to create dishes that feel comforting and familiar while still giving guests something new to discover.

This fall, let pumpkin share the spotlight. Exploring unexpected flavor combinations can help you create seasonal specials and LTOs that stand out from the usual fall offerings and give your customers another reason to come back. From versatile ingredients to unexpected pairings, there are plenty of ways to bring the flavors of fall to your menu without going overboard.
